This Mexican Style Meatloaf has all the flavors and spices that is sure to impress your dinner guests!

INGREDIENTS

2 lbs. lean ground beef
1 egg, beaten
8 saltine crackers, crushed
3 cloves garlic, minced & crushed
1 (4 oz.) can of chopped green chilies (not jalapenos)
1/2 chopped Spanish onion (medium to large)
1/2 (6 oz.) can of black olives, sliced
2 tbsp. soy sauce
1/2 tsp. pepper
1/2 can El Pato sauce
1/2 can tomato sauce

INSTRUCTIONS

  1. Mix crackers, soy sauce, and egg in a large bowl.
  2. Add in lean ground beef, garlic, chopped chilies, chopped Spanish onion, and sliced black olives.
  3. Mix well and mold ingredients into a loaf.
  4. Place loaf in a baking dish while leaving a little room on sides.
  5. Bake in a 300-degree oven for about 45 minutes.
  6. Take out of the oven and drain any fat in the dish.
  7. In a separate bowl, mix El Pato sauce and the tomato sauce together.
  8. Pour the mixture over the meatloaf, covering all of it, and bake until done (about 30 more minutes).
  9. If you desire it spicier, add the rest of the can of El Pato sauce or add jalapeno chilies instead of regular green chilies.
  10. Pop open another can of El Pato sauce and serve with chips!
