This classic homemade enchilada recipe will leave you satisfied every time! Impress everyone at your parties or family gatherings with this dish!
INGREDIENTS
1/2 diced onion
1/2 small can of olives
1 small can of diced green chili
1 lb. ground beef
1 28 oz. can El Pato Enchilada Sauce
1 cup shredded cheese
8 (6-inch) corn tortillas
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon oregano
1 teaspoon cumin
INSTRUCTIONS
- Preheat oven to 350°F
- Dice onions, green chilis, and olives.
- Season ground beef with salt, pepper, cumin, and oregano, or a taco seasoning packet.
- Sautè onions and seasoned ground beef until brown.
- Place into a bowl to cool. Then add the diced green chilies and diced olives.
- Soften corn tortillas on a medium heat burner.
- On a plate, pour enough El Pato Enchilada Sauce to coat the tortilla. Roll tortillas with ingredients from the bowl.
- Pour 1/2 can of El Pato Enchilada Sauce in the bottom of ungreased 13×9-inch (3-quart) glass baking dish.
- Lay the rolled enchiladas in baking dish then pour the rest of the El Pato Enchilada Sauce on top and sprinkle cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 15 minutes.
- Serve with your favorite toppings or even more El Pato sauce! (serves 6-8).
